Dinner was easy tonight, so I thought I would share…
herbed chicken & potatoes::
3-4 potatoes – sliced or quartered
2-3 carrots – sliced
4 chicken breasts – boneless/skinless
1/4 cup olive oil
1 tsp each – rosemary & thyme – crushed
1/2 tsp celery seed – crushed
1/8 tsp each salt & pepper
1/4 cup grated parmesan cheese
fresh parsley – snipped
Preheat oven to 425 degrees and mix everything except for cheese and parsley in a large bowl.
Pour into a large shallow pan (a broiler pan works best), and try to keep chicken on top so it doesn’t stick to the pan.
Sprinkle with cheese and parsley and bake uncovered for 40 – 50 minutes.
(Sometimes I add a sprinkle of garlic or onion or chives, and sliced mushrooms too.)
I like to serve this with a tossed salad.
